Duck Confit
Duck is often used by the French in their dishes, but this particular one deserves some love. Duck confit was originally made with the intention of preserving duck meat for later consumption, and it is made by cooking duck legs in their own fat until soft and tender. It is considered one of the finest French dishes, and is a specialty of the country’s Gascony region.
